1/2 cup of butter
1/2 cup sugar
1/2 cup brown sugar
1/2 cup peanut butter
1 tbsp vanilla
1 3/4 cup bob's red mill garbanzo bean flour
1 tsp baking soda
1 tsp salt
Package of hershey's kisses or other chocolatey delight.
Preheat the oven to 375.
Cream together butter, sugars, and peanut butter. Add egg and vanilla. Mix. Add flour, baking soda, and salt. Mix.
Form into balls. I tend to like my cookies smaller, so they were about one inch in diameter. Roll in white sugar and place on a cookie sheet. I've also done powdered sugar, but I love the graininess of white sugar.
Bake for 8 minutes. During this time I frantically unwrap the kisses in preparation for immediate stuffing. As soon as the cookies are done, take them out of the oven and push them into the cookies. Delectable.
They're still high in sugar, but the high protein and lack of grains make that forgivable in my eyes. Plus babies totally dig them!
